Very similar to quiche, this is about the easiest and yummiest dishes to serve to a large group of people for a dinner party. Frittata is really quite versatile and anything can be thrown in to this egg dish. The make "Frittata" means "fried" and comes from the technique of staring this dish off by frying it in a pan like a thick omelette and then finishing it off in the oven. I personally prefer to make the whole thing in the oven like a quiche minus the crust. The flavor is more to my liking as I don't like the flavor of fried egg yolk present in the whole scrambled eggs. And the preparation is really quite easy. You just layer all of your ingredients in a buttered casserole dish and pour your egg mixture on top, then bake.
First Prepare your ingredients for the filling. Here are some of my favorites:
Caramelized Onions:
Slice about four onions into 1/4 inch rings sautee them in butter for 20-30 minutes on low with a few grindings of pepper and few pinches of salt. Stir them almost constantly and they should turn a rich caramel brown and become sweet and intensely flavorful. Let them cool.
Wilt two bunches of spinach by steaming it in a big pot with a little water. When the spinach turns bright green and wilted plunge it into cold water to stop the cooking and cool it down enough to handle. with your hands, take a little of the spinach at a time and squeeze out the excess water. set aside
Crumble about one half of a log of goat cheese and set aside
Slice a few roma tomatoes if you like into 1/4 inch slices. set aside
Scramble 10-12 eggs with a few generous pinches of salt, a few grindings of pepper and about 1/3 cup of half and half. set aside.
Butter a 9x13 in. casserole dish and layer your ingredients into it: onions, spinach, cheese, onions spinach, cheese. Place your tomatoes on top in a nice design. Pour the eggs over and bake until the eggs are firm, about 30-40 minutes in a 375 degree oven. Serve warm or cold. It's nice with a salad and some crusty bread.
For variations anything can be added to the filling. Any of the quiche fillings will work wonderfully or you can use leftover veggies that you have in the fridge. Just layer in veggies, meat or cheese and pour egg mixture over it then bake it! Enjoy.
